Stuffed Pork Tenderloin

Hey Y’all,

Sooooo this recipe is absolutely delicious! This is the perfect stuffed pork tenderloin for the fall! There’s nothing I love more than coming home from a long day and being able to make dinner with Kevin (my boyfriend). We both equally love cooking (although he is wayyyy better than me), but most of the time I get frustrated and end up just watching him make the dinner. This recipe is a little complicated so he actually needed my help, and it doesn’t hurt that it comes out smelling heavenly!

the ingredients for stuffed pork tenderloin

Ingredients:

1 medium sized butternut squash

2tbs melted butter

1tbs maple syrup

1/4 tsp salt

1/4 cup brown sugar

3 golden potatoes

1 pork tenderloin (get a bigger one if there is more than 2 people)

1/4 cup Goat Cheese

a few pieces of sage

Instructions:

Step 1:

Preheat oven to 400 degrees Fahrenheit. Peel the skin off the butternut squash. Cut in half and scoop out the seeds. Chop half the butternut squash into pieces.

Step 2:

Melt the butter and maple syrup and then mix in the sugar and salt to create the glaze. Put the chopped butternut squash into a bowl and pour the glaze on top of it and toss. Spread the glazed butternut squash on a sheet pan and put in the oven for 30 minutes.

Step 3:

While you’re waiting, now is a great time to prepare the rest of the butternut squash. We chose to use the other half as a side and add potatoes as well. Simply chop up the rest of the butternut squash and 3 golden potatoes into a bowl. Melt 1tbs of coconut oil and drizzle on top. Add salt and pepper to taste and put in the oven.

Step 4:

Next, start preparing the stuffed pork tenderloin. Allow for the flat side of the pork to be on the bottom and slice down the middle without slicing through the pork. Sprinkle the Goat cheese down the middle.

Step 5:

Once the butternut squash is done, set aside and let cool. Turn the burner on the stove to medium and add about 1tbs of coconut oil. We used a cast iron skillet to cook our pork tenderloin because after it browns on the stove, you have to cook it inside the oven. After the butternut squash is cooled, add the butternut squash onto the Goat cheese. Next, add a few pieces of sage on top. Use butchers twine to tie up the tenderloin.

Step 6:

Once the stuffed pork tenderloin is all wrapped up and the skillet is nice and hot, place the tenderloin in the skillet. Cook on each side 3-4 minutes until it starts browning. Once each side is cooked, place the tenderloin in the oven for another 15-20 minutes. Remember that the potatoes and the rest of the butternut squash is still cooking in the oven so everything can be cooking at 400 degrees.

Step 7:

While the stuffed pork tenderloin is cooking in the stove, it is a perfect time to get out a bottle of wine. We choose the Cupcake Merlot to accompany our dinner. It paired very nicely with all the flavors of the tenderloin. Once the stuffed pork tenderloin is done, we got to enjoy a job well done!
