					<description><![CDATA[<p>Breakfast is by far, my favorite meal of the day. I love all things breakfast: eggs, bacon, sausage, croissants, waffles, pancakes, hash browns. I love it all. Today I&#8217;m going to be sharing my mother&#8217;s homemade waffle recipe. It is my favorite waffle recipe so far that I&#8217;ve tried, and it will definitely be yours too! Waffle Ingredients: 2 cups yogurt 1 3/4 cups flour 1 tsp baking powder 1 tsp baking soda 1/3 cup oil 2 eggs 1/4 cup sugar Step 1: First, combine the 1/3 cup oil, the 2 eggs and the 1/4 cup sugar in a bowl. Then beat the eggs, oil, and sugar with a whisk until you get an egg mixture. Step 2: Next, in the same bowl combine the 2 cups yogurt, 1 3/4 cup flour, and 1 tsp of both baking powder and baking soda. Step 3: Now that all of the ingredients are in the bowl, it&#8217;s time to stir them. The whisk is the best utensil to use because it helps get all the dry ingredients mixed in with the wet ones. You may notice that the batter is very thick. If that&#8217;s the case, then add a little milk until it thins out a bit. Step 4: After mixing the ingredients I let the batter sit for a little bit while I plug in the waffle iron. While I wait, I scrape the edges of the bowl and make sure that all of the ingredients were well mixed. Step 5: This is where I get out all the toppings. I also wash my berries and cut them up and set them aside. Step 6: You&#8217;ll know the waffle iron is hot and ready to go when it beeps. Once you hear the beep you can proceed with pouring the waffle mix on the waffle iron. Step 7: This is the hardest step because you have to wait. During the wait is a great time to get out all the toppings you want. Some of my favorites include: powdered sugar, Maine Maple Syrup, and whipped cream. Step 8: Woohoo! 					<description><![CDATA[<p>Hey Y&#8217;all, Sooooo this recipe is absolutely delicious! This is the perfect stuffed pork tenderloin for the fall! There&#8217;s nothing I love more than coming home from a long day and being able to make dinner with Kevin (my boyfriend). We both equally love cooking (although he is wayyyy better than me), but most of the time I get frustrated and end up just watching him make the dinner. This recipe is a little complicated so he actually needed my help, and it doesn&#8217;t hurt that it comes out smelling heavenly! Ingredients: 1 medium sized butternut squash 2tbs melted butter 1tbs maple syrup 1/4 tsp salt 1/4 cup brown sugar 3 golden potatoes 1 pork tenderloin (get a bigger one if there is more than 2 people) 1/4 cup Goat Cheese a few pieces of sage Instructions: Step 1: Preheat oven to 400 degrees Fahrenheit. Peel the skin off the butternut squash. Cut in half and scoop out the seeds. Chop half the butternut squash into pieces. Step 2: Melt the butter and maple syrup and then mix in the sugar and salt to create the glaze. Put the chopped butternut squash into a bowl and pour the glaze on top of it and toss. Spread the glazed butternut squash on a sheet pan and put in the oven for 30 minutes. Step 3: While you&#8217;re waiting, now is a great time to prepare the rest of the butternut squash. We chose to use the other half as a side and add potatoes as well. Simply chop up the rest of the butternut squash and 3 golden potatoes into a bowl. Melt 1tbs of coconut oil and drizzle on top. Add salt and pepper to taste and put in the oven. Step 4: Next, start preparing the stuffed pork tenderloin. Allow for the flat side of the pork to be on the bottom and slice down the middle without slicing through the pork. Sprinkle the Goat cheese down the middle. Step 5: Once the butternut squash is done, set aside and let cool. Turn the burner on the stove to medium and add about 1tbs of coconut oil. We used a cast iron skillet to cook our pork tenderloin because after it browns on the stove, you have to cook it inside the oven. After the butternut squash is cooled, add the butternut squash onto the Goat cheese. Next, add a few pieces of sage on top. Use butchers twine to tie up the tenderloin. Below is the video we watched to learn about how to tie the stuffed pork tenderloin! Step 6: Once the stuffed pork tenderloin is all wrapped up and the skillet is nice and hot, place the tenderloin in the skillet. Cook on each side 3-4 minutes until it starts browning. Once each side is cooked, place the tenderloin in the oven for another 15-20 minutes. Remember that the potatoes and the rest of the butternut squash is still cooking in the oven so everything can be cooking at 400 degrees. Step 7: While the stuffed pork tenderloin is cooking in the stove, it is a perfect time to get out a bottle of wine. We choose the Cupcake Merlot to accompany our dinner. It paired very nicely with all the flavors of the tenderloin. Once the stuffed pork tenderloin is done, we got to enjoy a job well done! Bon Appétit! XoXi,</p>

					<description><![CDATA[<p>Hey Y&#8217;all, For recipe #2 I was feeling the inspiration of summer and sitting by the beach sipping margaritas. Who&#8217;s with me?! Of course my favorite dish when beach side (or pool side, or really anywhere for that matter) is guacamole! It&#8217;s simple, delicious, and healthy! Keep in mind that I made this guacamole just for myself, but you can easily double the recipe and bring it to a party! Ingredients: 1 whole ripe avocado 1 small tomato 1 small bushel fresh cilantro 1 lime 1/4 small white onion 1/2 tsp salt 1/2 tsp pepper 1/2 tsp garlic powder 1/2 tsp cumin powder Optional: 1/2 tsp cayenne pepper (spicy edition) Step 1 First, get a small bowl and cut the avocado all the way around. Then take out the pit and slice the avocado so that it is easier to mash. Next, take a spoon and scrape out the diced avocado into a bowl. Mash the avocado with a fork or spoon. Step 2 The next step is to take the cilantro and chop it up as much as you can. Add as much or as little cilantro as you&#8217;d like! I love cilantro so I added pretty much the whole bushel, but I know some people do not like it at all! Add to the bowl. Cut up the onion as well. Then, dice the tomato and add to the mixture. Also add 1/2 the lime. Step 3 Next, add a little under 1/2 tsp salt, and a little under a 1/2 tsp garlic powder. Finally, add a heaping 1/2 tsp of ground cumin. p Step 4 Finally, add 1/2 tsp of ground pepper and if you would like it spicy, add 1/2 tsp of cayenne pepper. Mix ingredients all together and taste. If you like your guac with more lime, add the remaining 1/2 lime juice. Now you have a delicious go-to snack as well as a fabulous dip for parties! Guacamole is an easy and simple recipe that can be enjoyed time and time again. It can be enjoyed any time of the year, it can be enjoyed as a snack or add on top of a meal! Enjoy! Bon Appétit!
